Oatmeal Chocolate Chip Cookies – a healthier version of Grandma’s Cookies

My husband loves Chocolate Chip Cookies.  A while back I decided to take his challenge of making my Grandma Mary’s oatmeal chocolate chip cookies a little healthier.  


Wet ingredients ( mix these first in this order)

1 stick butter softened

1/2 c Brown Sugar

1/2 c Coconut Palm Sugar

1 egg

1/2 tsp Vanilla

Dry Ingredients ( mix these three and then add to the wet ingredients) 

1 c Almond Meal Flour

1/4 tsp Salt

1/2 tsp Baking soda

Then add these to the mix

1 1/2 c Quick Oats

1/2 bag of Dark Chocolate Chips

Cook at 350 deg for 10-11 min

Cast of characters ( most of them)

Cream the softened butter – I like to use unsalted so I can control the salt.  

Add the sugars

And the egg and vanilla

Stir together the almond meal flour, salt and baking soda, making sure to break up big clumps. (I hadn’t done that yet in this picture)

Add the dry ingredients to the wet 

Last add the oatmeal and chocolate chips

Spoon them out on parchment paper and bake. 

We like them best fresh, so I keep the dough in the fridge to cook on a whim for a snack or after supper.  

Here they are ready to be gobbled up.  If you love a soft cookie, these are not for you.  They are crispy and slightly chewy when warm – we love them.

When my sister Lynn lived in town with us, all I had to do was text her that Cookies were hot from the oven, and she would come over to chat.  Variation: When she makes them she adds peanut butter.
