My husband loves Chocolate Chip Cookies. A while back I decided to take his challenge of making my Grandma Mary’s oatmeal chocolate chip cookies a little healthier.
Wet ingredients ( mix these first in this order)
1 stick butter softened
1/2 c Brown Sugar
1/2 c Coconut Palm Sugar
1/2 tsp Vanilla
Dry Ingredients ( mix these three and then add to the wet ingredients)
1 c Almond Meal Flour
1/4 tsp Salt
1/2 tsp Baking soda
Then add these to the mix
1 1/2 c Quick Oats
1/2 bag of Dark Chocolate Chips
Cook at 350 deg for 10-11 min

Cream the softened butter – I like to use unsalted so I can control the salt.
Add the sugars
When my sister Lynn lived in town with us, all I had to do was text her that Cookies were hot from the oven, and she would come over to chat. Variation: When she makes them she adds peanut butter.
